But we found a new sugar to try! Panela is a sugar that is created by dehydrating the sugar cane juice instead of spinning it in a centrifuge. The result is a less refine sugar that still has a lot of the minerals that are created during the growing process.
Our recipe for the rum involved about 60% panela, 40% molasses, with a small percentage of overripe bananas that were used as a source of yeast nutrient. Once it was distilled, this rum spent 1 year and 6 months in a used 4 grain barrel.
