Eau De Vie means un-aged, or white, brandy. Brandy comes from any fruit that is fermented then distilled. In this case it is Pinot Gris grapes which are thought to be a mutant clone of the Pinot Noir family.
We worked with Odell’s Winery project to source and press the grapes. Then we fermented and distilled them on our small column in a single run. Some of the distillate was put into a very used French oak cask for a minimum of 3 years of aging. The rest was turned into this release.
