Amaro
Herbal liqueurs that also showcase bitterness create a category of spirits called Amari. These are then commonly broken into two subcategories, those sipped prior to dinner, apéritifs and those pour after the meal, digestifs. The premeal spirits tend to be more citrus forward and sweetened with a light body sugar. Those consumed after the meal highlight more earthy, cola, and spice notes while also have a thicker mouthfeel from a less refined sugar used to sweeten the spirit. The Block’s Amaro represents our digestif. Cardamom, close, star anise, and coriander keep your palette guessing as they show up at different times, the gentian and orris root create the bitter but not overwhelming finish, and several months spent in our own used whiskey barrels round out this amaro. Amari can be overwhelming on their own, especially if the bitterness is unexpected. However, they are critical to a large amount of cocktails because they add botanical complexity, sweetness, and the balancing bitter backbone.
