When The Block Distilling Co. set out to make gin we quickly came to realize there were too many amazing botanicals, citrus, and spices to play with. How could we restrict ourselves to just one gin? We didn't. We created four, with each being The Block's expression of the season. Starting with The Block Vodka as a base the botanicals are macerated at room temperature to ensure we only extract the best of the flavors. The Block's Spring Gin is a floral paradise made with rose, lavender, hibisucs, chamomile, and elderflower. Juniper is in there but ceases to dominate the flavor profile. Starting off sweet and bright no the front of the palate this gin finishes with a touch of black pepper spice from the earthy florals. The Block's Spring Gin creates a delightful gin fizz with the florals rising up through the foam and don't leave out the classic gin and tonic either.
