Helluva Wheat Whiskey
Three founders created The Block, two brothers and one of the brother's wife. The brothers are Colorado School of Mines alumni. Helluva Straight Wheat Whiskey is a collaboration with Mines. $10 of every bottle sold goes directly to a fund used solely for creative arts projects on the engineering focused campus. The founders believe that many math smart, rational thinkers need a release through the abstract and open-ended. Different grains result in completely different flavors for the final whiskey they help create. Wheat develops into a beautifully soft and nuanced spirit. We wanted to let it shine in the lead role when we created this mash bill and thus there are only three grains used, red wheat, white wheat, and malted barley. After at least two years in the barrel and bottled at 95 proof, it is a complex yet soft sipper that can handle a cube or taken as is. The Block makes everything in house from start to finish, from milling the grain to fermentation, distillation, and barrel aging. All our whiskies spend a minimum of two years in oak barrels where the flavor compounds developed by the yeast and chosen during distillation esterify, chemically developing into longer flavor compounds. Only full size barrels offer the perfect blend of flavor, surface area, and integration of the angel's share (exposure to oxygen) needed to create the development of those rich and complex notes found in a great whiskey.
